Hand-picked in mid-March from the Sandy Creek vineyard at Barjarg north of Mansfield. Crushed to open tubs, the deep coloured fruit was fermented for 10 days with daily hand plunging and pumping over. Pressed off skins and matured for 14 months in 1 and 2 year old French puncheons and barriques.
