2019 Cabernet Sauvignon

Hand-picked from the Baxendale vineyard high on Whitlands hills, in mid April. Crushed to small open tubs, the fruit had excellent balance and good acidity and was fermented for 7 days, hand plunging regularly to maximise the colour, flavour and tannin extraction, before pressing off skins to finish secondary ferment and maturing for 14 months in new and one year old French oak barriques.

The cool vintage produced dark maroon/plum colour and ripe blackcurrant aromas with notes of bay leaf, cedar and spice; the rich flavours are anchored and lengthened by pronounced oak characters and fine tannins. Drink 2024 til 2030
